pique boricua hero

In Puerto Rico, you will find a traditional hot sauce, called pique, used on rice, beans, and meat dishes. While most Puerto Ricans use their own recipes for making pique, creating a variation of taste, it is typically made with vinegar, a variety of chili peppers, garlic, and spices, followed by a fermentation period to allow for a more complex flavor to develop.

The Norris Square Neighborhood Project follows a recipe gifted to them by a community elder and land steward, Don Angel. Don Angel’s recipe calls for ají dulces (or any hot pepper), garlic, cilantro, bay leaves, salt, pepper, oil, and vinegar, providing just the right amount of spice that keeps you going back for more. This workshop will be led by youth from the Norris Square Neighborhood, who will show you how to craft and ferment the ingredients to create a perfectly delicious pique to use on your future dishes.
